Sometimes simple lunches are the best. A few fresh ingredients mixed together and spread over a crunchy piece of toast  infused with garlic and oil.

This smashed pea dip is easy to make and full of flavours. All you do is cook the peas then drain. In a food processor mix the peas with a few tablespoons of oil, 1 clove of chopped garlic, a few squeezes of lemon juice and some salt and pepper. I served mine on top of toasted sourdough bread drizzled with oil. You can sprinkle a little chilli powder on top to give it a kick should you wish or throw some feta on top to make it a little more filling.
